For all you gluten-free, fiber-loving, Omega-3-craving foodies out there. This is what I use for my “cereal” in the morning.

Flax gets good and gooey when it’s combined with water, which allows for it to “clump” beautifully. Don’t get freaked out by the slippery mess that you have on hand when you’re mixing it together.

Twice-Baked Cranberry-Walnut Flax Seed Granola
Yield: 1 1/2 c

1 c whole flax seed, soaked overnight in 1/2 c water (I love using brown and golden flax: 3 parts brown:1 part golden)

1/4 c dried cranberries

1/4 c chopped raw walnuts

2 t raw sunflower seeds

1 t ground cinnamon (or, more if you like it. I’ll be honest. I’m pretty heavy-handed with it).


1. Preheat oven to 200 degrees and line an edged sheet pan or shallow baking pan with parchment paper.

2. Mix all ingredients.

3. Pour into pan. Bake for 90 minutes. Let it cool and break into clumps.

4. Put back into oven for another 60 minutes so it gets good and crunchy.

5. Let it cool completely. Store in air-tight container.
