I always like to introduce at least one new thing at a dinner party to keep me on my toes. Why play it safe all the time?!
Hands down: this was a winner at our Thanksgiving dinner. It would also be wonderful addition to any brunch menu.
Gluten-Free Broccoli Casserole
6 T gluten-free flour (I use Arrowhead Mills all-purpose baking mix)
2 c fresh broccoli, rinsed and cut into small florets
1/2 lb ground sausage, cooked [OPTIONAL if you don’t dig the pig!]
1 lb creamy cottage cheese
1/2 t salt
2 cups shredded cheddar cheese, divided (I used white Wisconsin cheddar)
1. Preheat oven to 350. Beat flour and eggs until smooth. Add broccoli, sausage (if you’re using it), cottage cheese, salt and 1 1/2 c cheese.
2. Pour into a casserole dish. Top with remaining 1/2 c of cheese. Bake uncovered for 60-70 minutes, or until browned and firm.
3. Let it cool 5-10 minutes before serving.
